Papa's Pilar takes its name from Ernest Hemingway — "Papa" — and Pilar, the fishing boat that carried him out beyond the harbor to feast on life.
The brand channels the man himself: author, adventurer, conservationist, bon vivant. Its home is Key West, where Hemingway first settled in 1931. In 2017 the Hemingway Rum Company opened its distillery inside an 1878 tobacco warehouse in Old Town.
Rather than distill a single rum, the house gathers premium aged rums from across the rum world and marries them through a proprietary solera process, then finishes them in a succession of casks — a rum made to be savored, not mixed away.
